DESCRIPTION:Limit shapes and their phase transitions: classical and quantum
 \nDimitri M. Gangardt (University of Birmingham\, UK)\n&nbsp\;\n\n&nbsp\;\
 n\n\nI will present examples of Limit Shapes - the most probable macroscop
 ic shape\nwith sharp boundaries separating frozen and fluctuating regions 
 - which arise\nin a variety of classical and quantum systems. I will expla
 in a special role\nplayed by analytic functions defining Riemann surface w
 hose topology can be\nchanged abruptly across phase transitions. Most of t
 he examples are based on\nfree fermionic models\, however recently we stud
 ied a notable exception from\nthis rule - the Polytropic Gas with a power-
 law equation of state. The hydrodynamic\napproach to Emptiness Formation P
